INGREDIENTS:
☑️For the Aranchini Rice Balls:
2 Tbsp olive oil
2 Tbsp unsalted butter
1 medium onion finely diced (about 1 cup)
1 cup ham finely diced (about 3 oz)
2 cups Jasmine rice un-rinsed
1 cup Chardonnay (dry white wine)
5 cups chicken broth or stock (hot)
1 tsp salt (plus more to sprinkle fried arancini)
1 cup frozen peas fully thawed
1/3 cup parsley finely chopped
1 cup parmesan cheese shredded
4 oz mozzarella cheese cut into 24 (1/2-inch) cubes
☑️For Breading/ Frying:
1 cup all-purpose flour
3 large eggs beaten with a fork
1 1/2 cups Italian Bread crumbs
Oil for frying vegetable, canola, or grape-seed oil

It'not the italian recipe but they look deliciuos It's tipical dish that you can do It you have leftover risotto. In rome (italy) rice balls are called supplì, they are made with rice seasoned with ragù and inside a mozzarella cube. In Siciliy they call arancina , inside there is rice but the shape ia different, seems like a pear. Is a tipical street food that you can find in stores that sell pizza, roasted chicken. We call also "supplì al telefono" that means rice ball at the phone 🤣 because when you open the rice ball, the cheese inside is hot and melted and seems the wire of the phone. Now there are Many versions like carbonara, cacio e pepe, but all are very good. Ciao from italy, you have to try

Hey, just wanted to drop a comment in here. This recipe is a little different than what my grandma and aunt used to make, but I’m definitely going to try it. Looks amazing! I’ll post another comment when I eventually try making this. Thanks again for the video.

And I couldn't tell from your video, but since I prefer rice balls on the small to medium size, are the rice balls in this video you made on the larger size? Thanks again Natasha!

I'm confused. The recipe calls for 5 cups of low-sodium chicken broth, then you immediately ask me to add a tablespoon of salt? Also... None of my locally sourced growers cultivate the thawed-frozen variety, could I just use regular peas? Just kidding. Love the channel, you're wonderfully entertaining. Subscribed! Edit: I watched this video again hoping your wedding ring would disappear and your camera trick would be revealed to be nothing more than multiple unwed(?) sisters being in the studio with you. Alas, as I shall now only get to enjoy coveting your producer's video editing suite.

Arancini must be made with risotto rice, Arborio or Carnaroli (last one is better) if you’re calling it a classic recipe. And no ham. Sure, there are many variations but not so traditional then. These still look yummy!

Thanks, I enjoyed the way you presented it - fun but almost entirely to the point. Thanks also for printing the recipe, I wish more RUvidrs would do this. I'm going to do your recipe in two nights' time and with those ingredients I know it's be a hit. By the way, I know from other dishes such as stir-fry or casseroles that you don't have to thaw the peas before you put them in, but put them in earlier and the heat from the cooking and the hot food will thaw them. Again, thanks, and am subscribing.

Once arancini are fried and cool to room temperature, you can store them in the refrigerator or freezer (in a freezer safe container or ziploc bag). You could try cooked diced carrots or you could just leave them out

Those definitely are delicious, but not for Italian standards. I’m from Sicily, the place these lovely balls come from, without being rude, I’d suggest you to precise that this recipe is just a reinterpretation of the original arancini one. We put mozzarella (you don’t say 😂)and ragù in them, which is meat, tomatoes, peas, onions... and the rice on the outside is just rice, no additional ingredients in it, the peas are contained in the ragù itself.

My boyfriend and I made these a couple weeks ago and not only do these last a good long while in the fridge, days later they still tasted amazing! We also tried various dips, but a classic marinara or even spaghetti sauce (if you have it lying around like we had) goes well with these arancini balls. Thanks for sharing this recipe Natasha!
