Ingredients & Shopping List
+ For the cashew cream:
Cashews (raw and unsalted)
Water
+ For the Overnight Oats (366 calories, 17g fat, 9g protein, 40g carbs per serving)
1/2 cup old fashioned oats
1/4 cup chia seeds
1/4 cup cashew cream, diluted with 3/4 cup water to make cashew milk
Vanilla Extract
Artificial sweetener of your choice
Pinch of kosher salt
Berries and mint for topping
+ For the Turkey Bacon BLT (357 calories, 9g fat, 36g protein, 37g carbs per serving)
4 slices low-fat turkey bacon
3 Tbsp cashew cream with sprinkles of mustard powder, cayenne pepper, garlic powder, onion powder, salt and pepper (to make "mayo")
1 heirloom tomato, thinly sliced
Sprouted whole wheat bread, lightly toasted
Spinach or butter lettuce
+ For the Cashew Chicken Salad (439 calories, 18g fat, 52g protein, 17g carbs per serving)
3 chicken breasts, butterflied and pounded to a uniform thin-ness
2-3 Tbsp cashew cream
1 apple, diced
4 green onions, minced
2-3 Tbsp minced parsley
Sprinkle of curry powder
Kosher salt and black pepper
+ For the Shrimp Pasta with Garlic and Basil (472 calories, 14g fat, 30g protein, 42g carbs per serving)
4 ounces red lentil pasta
2 Tablespoons olive oil, divided
1/2 pound shrimp, shelled and deveined (shells optionally reserved)
1 shallot, finely minced
3 cloves garlic, crushed
1 tsp dried oregano
8 ounces cherry tomatoes, halved
1/4 cup packed basil leaves, minced
1/4 cup dry white wine (optional)
1/4 cup cashew cream
1/4 cup packed parsley, minced

High powered blender (for cashew cream)

@Shadow Knight Not cooking but on my diet twinkies were life. If you're ever in the gas station and really *really* craving something sweet and absolutely undeniably unhealthy from the dollar run like the cheap pig you are twinkies actually come in with like 260 calories for 2, versus the average 450 calories all the packs of honey buns and swiss rolls bring. On days I was desperate I found a corner store about 1.5 miles away. The walk there and back for the twinkie completely offset the calories the twinkie gave. Plus who wouldn't want to eat twinkies on a diet?

You can get the same result with cashews if you cover them with freshly boiled water and leave them soaking for 30minutes 😁 I use this method while I prep the rest of the meal. No need to preplan 😅

I know this is an old video but I just gotta say I hate that this video sort of perpetuates the idea that meals are “healthy” if they’re super low-calorie. Eating low amounts of calories IS NOT HEALTHY. Calories give you energy and you need them to live. Eating too many calories can be unhealthy for sure but eating really small amounts of calories like 1000 per day is so bad for you and can drain you of your energy. Healthy lifestyle is 100% about activity and getting all of your necessary nutrients. Starving yourself will not make you healthier.

Something I've found that helps is setting up a "protein, veg, carbs" system - i.e, Chicken, Pasta, Sweetcorn or Sausage, Peas and Carrots, Roast potato etc or Chicken, Rice, Salad and so forth

Cashews are known as the natural anti depressants, so cashew cream/milk is a brilliant way to shake up adding them to your diet to boost serotonin. Also, try to reduce carbs, but don't cut them completely (unless you're on a sugar/carbless diabetic diet), as consuming copious amounts of carbs have been found to make depression worse. So substituting regular pasta for lentil pasta is a great way to get some extra protein, and avoid too many carbs.

I’m pescatarian myself and I’d just like to say something. So, if you’re following a meatless diet people who eat meat probably aren’t gonna make recipes for you. You need to learn to adapt the recipes by doing basic substitution like Extra firm tofu = chicken Minced meat = meatless mince Chunks of beef = mushroom Obviously, as always, use common sense. Like, you can’t expect putting a mushroom on the barbecue to taste like a rack of ribs
